Bitcoin produces a block about every 10 minutes; Ethereum every 12 seconds; faster chains every fraction of a second. Each block records its transactions, a timestamp and the hash of the block before it.
"Confirmations" are the number of blocks added after the one with your transaction. More confirmations mean the transaction is harder to reverse.
